California-based, Ripple Foods is listening to the shift towards plant-based dairy products. The growing appeal is especially strong among the Gen Z (born 1997-2012) population. They site concerns for environmental damage from large scale cow farms which causes greenhouse gas emissions, soil and water pollution from fertilizers, and concern for the unethical treatment of cows.
Ripple specializes in making milk products from yellow peas. The beneficial yellow pea adds nitrogen into the soil, so instead of depleting the soil of nutrients, yellow peas are regenerative to the soil. The milk product is also higher in protein and calcium than dairy, almond and oat milks, and lower in sugar.
