Healthy eating and living have become the goal of millions of Americans in the last two years. Since the rise of COVID in 2020, many people have opted for plant-based foods as healthier alternatives. Former Amazon CEO Jeff Bezos has backed a food-tech firm called NotCo. Some pro-athletes participated in the last funding round, which raised $235 million and created a value of over $1 billion for NotCo. Now NotCo is officially a “unicorn.” It might be one of the good green things that happened during the pandemic.
